For now, I've kept it simple and did a 2 cheeses (Cheddar and Mozzarella) pizza. Later, I'll try keto friendly toppings! Take it away! It's a two part baking recipe but super quick baking times. In the first part you bake the crust. Then once the toppings are put on top, you bake again to melt the cheeses.
INGREDIENTS
2 cups Shredded Mozzarella Cheese
2 tablespoons (1 oz) cream cheese
1 cup almond flour
1 egg
1 teaspoon baking powder
1 teaspoon Italian seasoning
1 teaspoon garlic powder
LET'S MAKE FATHEAD PIZZA
1. Pre-heat oven to 450F.
2. In a microwave safe glass bowl, a2 cups shredded mozzarella cheese and 2 tbsp (1 oz) cream cheese and microwave for 45 seconds. The cheeses will melt enough to form a thick mixture (see video above).
3. Remove from microwave and mix with a silicone spatula.
4. Add 1 egg, 1 cup almond flour, 1 tsp baking powder, 1 tsp Italian seasoning, and 1 tsp garlic powder. Mix with spatula until well combined to form a dough.
5. Take the dough out and roll it smooth into a ball with your palms. The fathead dough is pretty sticky. To help things, you may brush your hands with canola oil. Flatten the dough gently and transfer onto a large piece of parchment paper and cover with another piece of parchment paper.
6. Use a rolling pin to flatten out the dough using a rolling pin to about ¼’’ thick.
7. Remove the top parchment paper and shape with hands to make even, round edges.
8. Transfer pizza, bottom parchment paper still on, onto a baking sheet and bake for 10 minutes.9. Next, take out the baked crust, add your choice of tomato sauce, cheeses, and toppings.
10. Bake for another 5 minutes or until the cheese melts and bubbles!
