Cheese Biscuits (Keto Friendly)


 INGREDIENTS

Almond flour, 1 1/2 cups
Salt, 1/4 tsp
Baking powder, 1 tbsp
Garlic powder, 1/2 tsp
Onion powder, 1/2 tsp
Eggs, 2 large
Cream cheese, 1/2 cup
Unsalted butter, 4 tbsp
Shredded Mozzarella cheese, 1/2 cup

LET'S MAKE BISCUITS!

1. Grease a 12 cup muffin pan with unsalted butter and preheat oven to 450 F.

2. In a big bowl whisk together dry ingredients: 1 1/2 cups almond flour, 1/4 tsp salt, 1 tbsp baking powder, 1/2 tsp garlic powder, and 1/2 tsp onion powder.

3. In another bowl whisk wet ingredients: 2 large eggs, 1/2 cup cream cheese, and 4 tbsp unsalted butter.

4. Add wet ingredients to dry ingredients, whisking thoroughly. Batter will get super thick, super quick. 

5. Add 1/2 cup Mozzarella cheese, and mix the batter thoroughly with a spatula. 

6. Scoop the batter with a spoon, spatula, or by hand (it is quicker!) and add equally to the 12 muffin molds. 

7. Bake biscuits for 8 minutes at minimum or until tops are brown. Insert a toothpick. If it comes out clean, they are done. Bake for a minute more, and additional minutes, if toothpick is unclean.

8. Allow biscuits to cool a bit, and use a skewer to pry them out and serve.
