INGREDIENTS
All purpose flour, 2 cups
Baking soda, 1 teaspoon
Baking powder, 1/2 teaspoon
Salt, 1/2 teaspoon
Nutmeg, 1/4 teaspoon
Cinnamon, 1 1/4 teaspoon
Ginger, 1/2 teaspoon
Sugar, 1/2 cup
Brown sugar, 1/2 cup
Canola oil, 1/3 cup
Unsweetened applesauce, 3 tablespoons
Peeled and shredded Granny Smith (green) apple, 3/4 cup (1 apple)
Red and green apple, sliced like discs for making chips
Cinnamon powder, for dusting apple chips
Vanilla extract, 1 teaspoon
White vinegar, 1 teaspoon
Water, 6 tablespoons
Icing sugar, for dusting
MAKING APPLE CHIPS
Preheat oven to 200 F. Set thinly sliced apple discs with core in the center on a baking sheet. Sprinkle apple slices with cinnamon. Set the baking sheet on the lower rack of the oven. Bake for a minimum of 1 hour and beyond until apple chips curl up. Do not bake to crispy, or they will go brittle.
SPICING UP SOME CAKE!
1. Preheat oven to 350 degrees.
2. In a mixing bowl, combine wet ingredients 3/4 cup peeled, shredded Granny Smith apple, 3 tablespoons unsweetened applesauce, 1/3 cup canola oil, 6 tablespoons water, 1 teaspoon vanilla extract, and 1 teaspoon white vinegar. Mix these well.
3. Add 1/2 cup sugar and 1/2 cup brown sugar. Mix well.
4. In a second big bowl, sift together the dry ingredients: 2 cups all purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 1/4 teaspoon nutmeg, 1 1/4 teaspoon cinnamon, and 1/2 teaspoon ginger.
5. Add dry ingredients to wet ingredients while mixing continuously. I used my electric mixer.
6. Pour batter in an 8x8" square pan.
7. Bake for 25-32 minutes or until a toothpick comes out clean.
