INGREDIENTS
Tilapia Loins (from Costco), 2 defrosted fillets
Canola oil, 3/4 cup
Shan Meat Masala, 2 teaspoons
Coriander powder, 1 teaspoon
Turmeric powder, 1 teaspoon
Cumin powder, 1 teaspoon
Garam masala, 1/2 teaspoon
Ginger and garlic paste, 1 tablespoon
Red chili powder, according to taste
Fried onions, 2 tablespoons
★ MARINATION
Make 3-4 angular cuts on both sides of tilapia fillets.
In a bowl, place 2 tilapia loins, add 2 tsp Shan Meat Masala, 1 tsp coriander powder, 1 tsp turmeric powder, 1 tsp cumin powder, 1/2 tsp garam masala, red chili according to taste, and pour 3/4 cup canola oil over this.
Mix well and rub in the mixture into the angular cuts. Marinate for about 20 minutes.
★ GRILLING
Add 2 tbsp fried onions and 1 tbsp ginger and garlic paste to the grill pan and set on moderate heat.
After frying for a couple minutes, add the fish along with the marinade mixture into the pan.
Fry each side on low to mild heat. I gave about 3-5 minutes on each side.
Using tongs, I slid the fillets to the edge of the pan to fry the sides as well.
The fish is well done when it just begins to break. Immediately remove from heat and serve.
