Orange Chicken

INGREDIENTS
FOR CHICKENChicken boneless (breast/thigh), 2.5 pounds, chopped chunks
Corn starch, 2 heaped tablespoons
Eggs, 4, well beaten
Black pepper (coarse powder), 1 tablespoon
White pepper, 1 teaspoon
FOR SAUCEOrange juice, 1/2 cup
Soy sauce, 1 tablespoon
Brown sugar, tightly packed, 1 tablespoon
Vinegar, 1 tablespoon
Crushed red pepper, according to your spice taste
Minced ginger, 1 tablespoon
Crushed garlic, 1 clove
Hot sauce (I used Frank's)
PREP THE CHICKEN
1. In a large bowl combine 4 beaten eggs and 2 heaped tablespoons cornstarch and whisk well until foamy.
2. Add 2.5 pounds boneless chicken chunks, 1 tablespoon black pepper powder, and 1 teaspoon white pepper powder and mix well.
3. Set the marinated chicken aside and start making the orange sauce.
MAKING THE ORANGE SAUCE STEP ONE
1. In a non stick skillet add 1/2 cup orange juice, 1 tablespoon soy sauce, 2 tablespoons oil, 1 tablespoon minced ginger, 1 clove crushed garlic, crushed red pepper, 1 tablespoon brown sugar, and 1 tablespoon vinegar and whisk well.
2. Set on medium heat and allow to boil slowly for 5 minutes.
3. Set this half down sauce aside and fry the chicken.
FRYING THE CHICKEN STEP ONE
1. Take oil in a cooking pot, about a 2 inches level and heat it up well.
2. Add the marinated chicken, dripping off excess egg and cornstarch batter, and fry for a short while (less than a minute) until it browns very slightly.
3. Take it out on a dish towel to dry off.
MAKING THE ORANGE SAUCE STEP TWO
1. In a small bowl take 1/4 cup water and 2 tablespoons of cornstarch and mix well to form a solution.
2. Set the partially done orange sauce on medium heat and add the solution to it, mixing well.
3. Allow the mixture to cook on a very gentle simmer, while stirring continuously, until the sauce thickens.
4. You may add water to lengthen the cooking time.
5. Conduct a taste check. Check for salt, adjust slightly (can be done later after chicken is added).
Note: Sauce will taste very sour and orangey at this point - not necessarily tasty. Chicken will change the taste altogether.
FRYING THE CHICKEN STEP TWO
1. Fry the half fried chicken pieces again and this time directly drop them into the simmering orange sauce.
2. Cook the chicken on a low simmer.
3. Conduct a taste test here, adjust salt and add hot sauce according to your liking.
4. As the sauce begins to dry, add the chopped green leafy parts of the green onions and remove from heat. Cover with a lid.
Serve with plain boiled rice.
