INGREDIENTS
- Jell-O White Chocolate instant pudding mix (available in sugar-free), 1 small pack
- Canned pumpkin paste (the one used for pie fillings) (this is unsweetened), 1 1/2 cup
- Cinnamon powder
- Crushed cookies (preferably vanilla cookies) (sugar-free is available)
- Garnishing condiments (I used a sugar-free chocolate wafer, cocoa powder)
- Prepare the Jell-O White Chocolate instant pudding mix as per the instructions on the pack.
- Add the canned pumpkin paste in a cooking pot on low heat.
- Add one tablespoon at a time of the Jell-O White Chocolate instant pudding mix to the pumpkin paste and continue heating and stirring.
- Keep tasting, and adding the Jell-O White Chocolate instant pudding mix, until the paste becomes sweet. It would be a light orange paste.
- Add a sprinkle of cinnamon just to infuse a flavor in there. If you like a very strong cinnamon taste, add more. I keep it limited to a hint.
- Mix the pumpkin and white chocolate mixture into the remaining Jell-O White Chocolate instant pudding mix and mix well to an even pudding.
- Put the pudding in the refrigerator to set for about half an hour.
- In a serving glass, add a layer of pudding.
- The second layer is of crushed cookies.
- Again, add pudding as the third layer.
- Sprinkle with unsweetened / sweetened cocoa.
- Garnish with chocolate wafer.
