Choco-Pineapple Whole Wheat Pancakes [sugar-free]


Recipe has been borrowed and altered to make a whole wheat, sugar free version.

INGREDIENTS
Whole wheat flour, 1 cup
Equal sweetener sachets, 4
Truvia sweetener sachet, 1
Pineapple juice - unsweetened, 2 tbsp
Pineapple chunks
Imitation vanilla essence, 1 tsp
Baking powder, 2 tsp
Salt, 1/2 tsp
Egg, 1
Milk, 1 cup
Vegetable oil, 2 tbsp
Russell Stover sugar-free pecan delight chocolates


COOKING


[TIP: To avoid overdoing the pancake, flip it as soon as you see the first few holes [bubbles] appear on the surface [photo on the right]. Make sure you have already placed your pineapple chunks in it before flipping]. When you turn it at the first few holes, the underside will be done [photo on the left]. If you feel it is still moist and undone in some areas, you can always flip back once the second side is cooked.]
  1. Combine dry ingredients together in a bowl, mix well with a spatula.
  2. In a separate bowl, combine the wet ingredients and beat well.
  3. Add dry ingredients to wet ingredients. Beat until a smooth batter is formed.
  4. Take a large griddle (large, flat pan) and place over moderate heat.
  5. Brush the griddle with vegetable oil. Use butter for max flavor.
  6. Sprinkle a drop of water on the griddle, if it makes a crackling sound the pan is ready.
  7. Use a cooking spoon to scoop the batter and pour slowly on the pan. As you pour, the better will spread. Use the back of the spoon to lightly spread it in a circular motion. Add a bigger load of batter before spreading to make a bigger pancake.
  8. Quickly, before holes start forming on the surface,  place pineapple chunks into the pancake. As many as you like.
  9. As soon as the first few holes form, use a metallic spatula spoon to turn the pancake.
  10. Allow the pancake to cook well, keep checking to avoid burning.make sure both sides are cooked well.
  11. Take the pancake off the griddle.
  12. Melt Russel Stover pecan delight sugar-free chocolates in a microwave. Best way to melt is to allow 30 seconds of heating, then stirring with a fork, and then heating for 10 seconds while stirring until the chocolates turn into a spread-like paste.
  13. Use a butter knife to coat the pancake with this chocolate spread and garnish with a pineapple chunk.
