Gram Flour Dumplings with Onions and Cilantro

  • Gram flour, 2 cups
  • Chopped cilantro, 1 cup
  • Fine chopped onion, 1 cup
  • Salt, 1/2 tsp (adjust in the batter after frying and tasting a dumpling)
  • Baking soda, 1/2 tsp
  • Red chili powder, 1/2 tsp
  • Black pepper powder, 1/2 tsp
  • Onion powder, 1/2 tsp
  • Garlic powder, 1/2 tsp

  1. Prepare the batter by mixing all ingredients in a glass bowl and adding water. I recommend glass bowl because gram flour contains natural oils and plastic bowls may be tough to wash. The consistency of the batter should be thick, not liquid.
  2. Set the batter aside for about an hour.
  3. Heat oil for deep frying.
  4. Pour the batter carefully using a tablespoon and allow the dumplings to fluff up.
  5. Using a straining spoon, take the dumplings out, draining the oil and serve out on a dish towel (thick tissue paper) to absorb excess oil.
  6. Serve with chutney or condiments of choice.
